I hope all is well and staying healthy.
During this quarantine if your home has been anything like ours you have done a lot of cooking and eating. All of us love macaroni and cheese including the grand babies.
Tonight I wanted to share a recipe we love but without all the carbs:
Cauliflower Mac & Cheese
This recipe is amazing and Low carb.
You will need the following ingredients:
1 bag Cauliflower
2 ounces Cream cheese
1 1/2 teaspoon Dijon mustard
1 cup Heavy cream
2 cups shredded cheese
1/4 teaspoon garlic powder
Turn oven to 350 degrees
Spray a pan with nonstick spray
Place cauliflower in microwave as directed on bag.
In a saucepan mix together the cream, mustard and cream cheese on low until well blended. Add 1 1/2 cup of shredded cheese, salt, pepper and garlic. Cook on low until cheese has melted. Remove from heat. Add the cauliflower and mix well.
Transfer to the prepared pan. Top with additional 1/2 cup shredded cheese.
Bake at 350 for about 15 minutes or until slightly brown on top.
