Fall Eats

Good evening.

I hope you have been doing good and drawing closer to Christ daily.  There has been so much bad news lately.  It sure makes me thankful to have a relationship with Christ.   I believe his coming is closer than ever.  I am glad we can be in the center of his will and ready to meet him.  I pray that you are.

It’s fall and a great time to make soups and sandwiches.  Nothing like eating a bowl of chili, cheeseburger soup or potato soup on a chilly day.  Soups are easy crock pot meals also.  I  am a big crock pot user since I work.  It feels awesome throughout the day to know supper will be ready when you get home and the cleanup is easy, especially with crock pot liners.  (Whoever invented those things are a genius!)

Today I wanted to share a new recipe I got from a friend for homemade pimento cheese spread.  It is easy to make and tastes so scrumptious.

Pimento Cheese Spread

8oz block cheese-shredded ( I use sharp)

8oz cream cheese (softened)

1/3 cup mayonnaise

Pinch of garlic

4 oz jar (drained) pimentos

Step 1.  Grate the cheese ( you can use the already shredded but it isnt as moist)

Step 2.  Place soft cream cheese in blender and allow to blend well.  Add a pinch of garlic, shredded cheese and mayonnaise.  Blend until mixed well.

Step 3.  Stir in pimentos with a spoon.

Step 4.  Place in an airtight container and refrigerate at least 1 hour before serving.
