Blessed Eats

Good evening,

“This is the day which the Lord has made, we will rejoice and be glad in it.”

Psalms 118:24

We have had several days this week with absolute beautiful weather and today was that way as well.  It has been another busy week but a blessed week.   I have said prayers for you who read my blog and hope you have had a good week as well.  (Maybe not a perfect week but we won’t get that until we reach heaven.)

I am hoping you are taking some words and ideas from my blog and applying them to your lives.

Today we are gonna step into the kitchen again and make an easy supper..

A BBQ Chicken Mexican Salad.  Actually I thru some left overs into this meal and I will say it was one of the best salads I ever ate.  🙂

I cut chicken breast into thin strips and browned them then added BBQ Sauce.    I took a leftover corn on the cob and place in a skillet to brown. While they were browning I cut up some salad greens and topped with tomatoes, onions, cheese, jalapeños and black beans.  I then added the cooked corn, crushed torilla chips, a spoonful of sour cream and ranch dressing.  I placed some rice on the side and made a fresh pitcher of Sweet Tea.

It was yummy!!!

Try this for another quick meal that will leave you extra time to spend with your family.

This evening I am heading with my family to The Spring Jubilee Campmeeting in Lucasville to hear The Primitive Quartet Sing.  (Another of the things I Love to do.)
