I hope you are having a wonderful start to the season of Autumn at your house. I love the feel and smell of fall in the air. I guess you could say there is something I love about each season we experience in the Ohio Valley.
I haven’t shared a recipe for a few weeks so figured this is a good recipe to share We have made this a lot this summer. I hope you enjoy it!
STUFFED GREEN PEPPERS 🌶
Green Peppers are an awesome asset to our suppers. We have made changes and spiced it up some. I think you will like this recipe that we love.
-Turn the oven on 350 degrees.
-Cut the tops off the green peppers and rinse them.
-Place in boiling water for about 10-15 minutes to allow them to cook thoroughly.
-Brown ground beef along with mushrooms, onions & more peppers if desired.
-Add 1/4 cup spaghetti sauce to the ground beef mixture.
-Place a 1/4 slice of cheese on the bottom of the pepper and then layer the ground beef mixture and another 1/4 slice of cheese until full.
-Top with a drizzle of ketchup and cheddar or mozzarella cheese.
-Place in a pan and bake 20 minutes.
(I have also stuffed with shredded chicken, salsa and pepper jack cheese.)
Which ever stuffing you choose you can’t go wrong and this is a very good low fat meal that is quick and easy to make.
Take time to watch the leaves change and smell the special aromas of Autumn. 🍂
