Garden Favorites

Good Morning,

I hope you have had a wonderful week.  It has been a week of prayer and waiting here.  Now that I am an Army mom I have become a mailman and Army Facebook stalker.   We continue to wait anxiously for a letter from our son letting us know everything from his addresss to his graduation to “mom I am ok.”  Actually the last one is the most important for me.  With God by his side and all the prayer warriors lifting him to God, I am sure he is doing great.

Today my mother in law sent me a recipe using fresh garden vegetables.  Since they had brought us some garden vegetables last week it was an easy meal to prepare for.   Phil and I love to cook together so we jumped in and made it for supper. I wanted to share it with you all.  I changed a few things from the recipe to spice it up a bit.  We love spices.

Garden Vegetable Dish

Fresh Zucchini (Diced)

1 can of Diced tomatoes with Chiles

Garlic powder

Salt

Pepper

Fresh green pepper (diced)

Parmesan Cheese

Mozzarella Cheese

Put some Olive Oil in a frying pan.  Place diced zucchini and green pepper.  Sprinkle with garlic powder, salt and pepper.  Sauté a few minutes until zucchini is browned.  Add can of diced tomatoes with green chiles.  Cover and let cook on medium for about 15 minutes stirring frequently.  Top with mozzarella and Parmesan cheese.  ENJOY!!!

This is an easy recipe that is good for you and scrumptious.

We served with a Ground Beef patty topped with cheese and mushrooms.

A light meal that was oh so filling and with no guilt.

I have been listening to a preacher on TV that I really enjoy.  He preached a message on “High Standards.”  Sometimes I think our standards of living a Christian life has declined.  I am definitely not perfect and will never be until I reach heaven but I pray daily and strive to live a life for Christ that has such High Standards of living that if Christ comes back I have nothing to hide.  We don’t hide anything from him anyway, he knows everything, even our thoughts. My mom always said don’t do anything you wouldn’t want to be caught doing when Christ comes back.  That sure puts things into correct perspective.

I pray I always do this.

  1. My mom always gave me the same advice. I’ve made sure to do the same with my kids, but I was a little more specific – would you… go to that place, watch that movie, listen to that music, read that book… if Jesus was sitting beside you. Thanks for the recipe. We will continue to pray for Eli and that you’ll hear from him soon.
